Drumstick Leaves Stir Fry
Drumstick Leaves Stir Fry is my favorite dish, but you must be a little diligent because you need to separate the leaves from the stalks. However it's worth it, because it's simple to cook and real tasty. Besides they are very nutritious.
It's rich in calcium mineral so it strengthens and keeps your bones healthy. Drumstick leaves are also good for your eyes because they are rich in vitamin A and good for digestion too. This recipe is a very simple and easy stir-fry recipe, so make sure you try it out. I love to eat drumstick leaf stir fry with steam white rice and sambar plus appalam.

1. Remove the leaves from its stalk and wash it. Cut the onions into small pieces.
2. Heat oil in wok, add the mustard seed and urad dhall, once it starts to splutter, add the dry red chilies, cook for one minute and then add the onions. Cook until the onions are translucent.
3. Add the drumstick leaves, sugar and salt and cook it until the water evaporates and the quantity reduces. Then add the grated coconut and fry for a minute and it's done.
4. Ready to be served with white steamed rice, sambar and appalam.
* The cooking time depends on the heat. So adjust accordingly.
